Pocket Pies - Fun and Tasty Individual Pies

William Sonoma had several of these Pocket Pie Molds available some years ago and I bought many of them.  My favorite mold was the Lattice Mold.  I also have the Star, Apple, Pumpkin and Heart Molds.  {You can probably locate these on eBay or somewhere like that, since WS has discontinued them.}  You can use your own home-made recipe for Pie Dough or a ready-made Pie Crust will do just fine too.  The same for Pie Filling...your own home-made favorite or a jar or even a can of Pie Filling works just as well too.  Brush with an Egg wash and sprinkle with sugar before baking, to create a nicely brown...
crunchy and sweet top to your pies.  My favorite fillings are 4 Berries and Apple...and I love the Pie Fillings I purchase at one of MY Favorite Shops in Door County, Wisconsin when I'm on vacation there.  

Apple Slab Pie

APPLE SLAB PIE - from Pilgrim Lutheran Church Cookbook 1969  [no photo yet]

Granny apples sliced

1 cup sugar

1T flour

1/2t cinnamon

3c flour

1/2t salt

1 1/8c shortening

3 egg yolks

10-11T cold water

Apples slices

1c powdered sugar

2T milk

1t vanilla

Mix flour, salt and shortening.  Add egg yolks and water.  Mix as pie dough and chill in refrigerator.  Dough is very sticky.  Divide dough in half.  Roll out very thin and spread on greased cookie sheet.  Fill with apple slices; sprinkle with mixture of 1c sugar, 1T flour and 1/2t cinnamon.  Roll out the other ½ dough, place over apples, pinch edges together and bake at 375° for 45 minutes.  Frost while still warm with 1c powdered sugar, 2T Milk and 1t vanilla.

Moving On...

After blogging for more than 10 years here, I find I just can not continue with this Blog and yet I can't bear to delete it either.  So I will just say goodbye to it.

I am now divorced, the 3 PuppyKids are with their new families and doing well.  My husband was put into assisted living by his adult children where he is being treated for Alzheimer's.  My house is for sale and has been for a while now and I hope it sells soon.  I have a 2 month old Grandson named Sawyer James that I haven't met yet...and he and my family are where I plan to move, when the house sells - to Wisconsin.  I'm beginning a new part of my life, different than I ever imagined...and with God's help, I will flourish.  I will think of you often and remember and cherish the friendships we formed over the years.  I will be making new friends, more in the "real" world than through word typed on a Blog screen.  I want to have real live relationships.

All of My Pups, Have New Homes

On January 25th Ronda made a trip from her home in South Bend, Indiana to mine in Michigan.  Prior to our visit, we had several text and phone conversations.  I asked alot of questions.  I was intent on getting a home for my girl, where she had a furry brother or sister...and where she'd be taken care of and would be happy!   Angel is a 4 1/2 year old Coton deTulear.  The visit went very well and at the end of our visit, Ronda and Angel left for home to meet her furry brother, Mr. Darcy, a schnauzer.  When they left, I was crying and sobbing.  I knew I'd miss her terribly.  But I also knew that I had done the most difficult thing, but yet the best thing I could ever do for her.  And I knew she was happy.

Getting Help from a Few Places and People

Hi Everyone,

I'm on a mission again, to find all 3 of my precious PuppyKids a new home.  I no longer see the need for them to be together.  It would be nice, but not necessary.  As long as Jasper has a male figure in the home to walk with and play with, he'll act like a one year old puppy, that's what everyone says when they see him with a guy.  The two girls, Angel and Rosie, will be happy alone, too, as long as they have someone to snuggle up to and that Angel can alert someone to stranger danger!!

My local Humane Shelter is helping, by reaching out to shelters and people looking for small dogs.  My Vet is also helping by putting their Bios on the wall in the waiting room and listening for anyone who may be looking for a small dog.  And now, the Breeder, in Indiana, where I got all 4 of my Pups, has posted an entire page on the Adult Dogs Available.

I really appreciate all the help!  I'm still mentioning the pups wherever I go and to everyone I speak to on the phone, just in case...ya know?

Christmas 2017 In My Sitting Room

This Christmas was quiet...just me and the Pups. 

I got my Cinnamon Rolls baked and handed out to neighbors and friends.

The Pups and I watched movies after everything was cleaned up and we all enjoyed a few treats.

My Son, Stephen and his wife, Lindsey [above, getting their Christmas tree this year] sent me an on-line Gift Certificate for PetCo.  I ordered the pups some food and some treats...and they arrived yesterday.  I didn't have much food when they returned last week and knew I needed to order it, but didn't want to have to spend much money, with the shortage of money I currently have...or don't have, really.  

The PuppyKids Are Back Home With Me

Late Thursday afternoon, after speaking to the Mrs. of the couple who took my Pups almost 3 weeks ago, a friend and I went to their house for a visit.  A visit that I hoped would end with me bringing my Pups back home.  3 weeks ago, when the Pups initially stayed with this couple, we knew there would be a trial period of about 3 weeks, in case either of us saw a need to have the pups come back to live with me.

My friend and I arrived and the couple welcomed us, as did my Pups!  I said we needed to sit down because I was there to talk to them.  I said I felt that in talking to them, that they may have taken on too much with 3 small dogs.  They asked if I wanted to take them back home.

My Annual Christmas Week Baking Tradition

CINNAMON ROLLS

Not just any Cinnamon Rolls either...Ree Drummond, the Pioneer Woman's Cinnamon Rolls!!  They are the BEST and if you make the entire recipe, it makes lots of little round crinkled aluminum pans full...of yummy ooey, gooeyness!  And the recipe is so easy.  You can even make the dough and store in the refrigerator for 3 days, in advance of when you want to bake the rolls.  The rolls roll out easier and they turn out prettier too.

Alright, so how many of you would really care just how PRETTY these yummy cinnamon rolls look when they come out of the oven?  I do, because I'm that way.  I used to make and decorate cakes, including wedding cakes that served 500 people!  I had to care how those turned out and now I'm no different when it comes to always wanting baked and cooked goodies to look pretty too.
